5 Best New Caribbean Resorts for a Luxury Escape

The Caribbean welcomes new resorts every year. Each attempts to bring something new to the tropical paradise, be it more exotic cuisine, unique spa experiences, or architect-led designs that reimagine their beachfront settings.

If you’re looking for something a little different for your upcoming vacation in the Caribbean, we introduce you to five of the newest (and best) luxury resorts to have recently opened their doors in this part of the world.

There is a reason so many are opening at once. The Caribbean welcomed 35 million stay-over visitors in 2025, roughly 900,000 more than the year before and the third consecutive year above pre-pandemic levels, according to the Caribbean Tourism Organization. Cruise visits hit 35.5 million, 16.7% above 2019. The CTO projects a further 3–4% growth in stay-over arrivals through 2026 — which means more resorts, and fuller ones.

“New” is a word that gets stretched in travel writing, so we’ve been specific: every resort here opened within the last eighteen months, and we’ve given the month each one actually started taking guests. Three opened in 2026, two in 2025 and have had long enough to build a track record — which, for a resort you’re paying $400 to $750 a night for (roughly €346 / £296 to €650 / £556), is worth knowing either way.

1: Sapphire Sands Villas, St Lucia

Opening date: July 2026 Rooms from: $454 per night, about €393 / £336 (one-bedroom villa, room only) Best for: Luxurious family getaways

Perfectly located on Reduit Beach in Saint Lucia, Sapphire Sands Villas opened its doors in July 2026. It was supposed to open in February, but construction delays meant that it had to settle for a mid-summer arrival.

The setup is unique to Saint Lucia. There are 27 “keys” — one, two, and three bedroom villas with customizable layouts — which are ideal for multi-generational families looking for a full-service, luxurious beach escape in the Caribbean. Each villa comes with fully stocked kitchens and 24/7 personalized butler service.

Food and drink are under the command of head chef, Davidson Henry, winner of the Independence Gold Cuisine Challenge and several other awards. His menus are Asian-fusion inspired, with local Creole creations a hit with vacationers. You can choose to dine at your villa, with chefs ready to prepare your evening meal in your own kitchen.

The resort is owned and operated by Bay Gardens Resorts, and Sapphire Sands is their fifth property in Rodney Bay. It joins the likes of Bay Gardens Beach Resort and the Bay Gardens Hotel, which are long-established, luxurious resorts with strong reputations in the Caribbean.

When you stay here, you can participate in the ‘Stay at One, Play at Five’ program, which gives you access to all of the group’s properties. This includes access to kids’ clubs, pools, fitness centers, and the Splash Island Waterpark.

That last point is the real argument for this one over a standalone villa rental. A private villa gives you space; this gives you space plus five resorts’ worth of facilities, which matters considerably more when the group includes children.

2: One GT, Grand Cayman

Opening date: May 2026 Rooms from: $337 per night, about €292 / £250 (standard Dawn Suite, room only) Best for: Foodies looking for a city break on Grand Cayman

One GT opened its doors in May 2026, and it’s situated in the heart of George Town, Grand Cayman. It opened in style, with a launch party 144 feet above the city, launching a project described by the developer’s president, Jeremy Hurst, as a way to “bring people back downtown, support local talent and businesses, and provide exceptional guest experiences.”

While most visitors head straight to Grand Cayman’s Seven-Mile Beach, this downtown hotel offers an intriguing change of pace and a different base from which to explore the island.

The building that houses the hotel is also home to privately-owned residential apartments, with 94 suites in all. They were designed by Cayman-based Trio Architecture, and the condo accommodations appeal to everyone: families, retirees, solo travelers, and digital nomads.

The hotel will give you a free ride anywhere within a six-mile radius, which is perfect for long days at the beach or at any of the independent restaurants George Town is renowned for. The food on premises, though, is one of the standout things about this property.

Executive chef Rene Cahane leads the culinary program, serving up ambitious, locally unique meals from the rooftop restaurant, Byu. Pan-Asian cuisine, fortified with Caribbean spice, is the name of the game, with local favorites including tuna tataki with a jerk-spice rub.

Your booking strategy depends on your preferences, with one and two-bedroom apartments to choose from. One-bedroom suites offer 604 square feet of space and incredible seaside views. Bed-and-breakfast packages can be added online before your stay, but there are no meal plans beyond this.

At $337 this is the cheapest room rate on the list, and Grand Cayman is one of the most expensive islands in the Caribbean — so a downtown base with a free six-mile shuttle is a genuinely different value proposition from a beachfront resort here.

3: Royalton Vessence, Barbados

Opening date: June 2026 Rooms from: $633 per night, about €548 / £469 (Luxury Junior Suite, all meals included) Best for: Adults looking for all-inclusive luxury in Barbados

This Marriott Autograph Collection property officially opened its doors in June 2026. It’s an adult-oriented hotel offering all-inclusive accommodation and a range of wellness activities, ranging from yoga to tai chi.

It’s located in Holetown, a mere thirty-minute drive from Grantley Adams International Airport. If you’re unfamiliar with the island, Holetown is in the parish of St James, on the sheltered west coast (also known as the Platinum Coast), approximately 11km north of Bridgetown.

As an all-inclusive resort, the booking strategy is straightforward. This new Caribbean hotel is ideal for anyone looking for a luxury beachfront property that takes care of everything for you. Rates start from $633 per night for luxury suites, with all meals included.

There are four on-site restaurants. A generous breakfast buffet is served at Essenza, with floor-to-ceiling windows looking out onto the beach. Lunch and dinner can be taken at Petisco and The Saffron Hut, while supper is best enjoyed at Hunter, where the ribeye has already received rave reviews among guests.

You may wish to upgrade to the hotel’s Diamond Club tier for butler service 24/7 and access to premium amenities (preferential room locations, upgraded mini bar, and hydrotherapy access). If you frequently stay at Marriott properties, this is a great way to use your points.

The Platinum Coast is the calm side of Barbados: the Caribbean Sea rather than the Atlantic, which means flat water and swimmable beaches rather than the surf on the east coast. Worth knowing if you’re comparing Barbados resorts on price alone.

4: Salterra (A Luxury Collection Resort & Spa), Turks & Caicos

Opening date: March 2025 Rooms from: $749 per night, about €649 / £555 (Deluxe room, ocean view) Best for: An exquisite spa escape in the Caribbean

Despite only opening its doors in March 2025, Salterra has already established itself as one of the top-rated five-star resorts on Turks & Caicos, and, more broadly, in the Caribbean. Upon its opening, the MD of Salterra, Michael Tibbets, described the resort as “a destination where luxury and sustainability come together in an extraordinary setting.”

Accommodations, designed by multi-award-winning firm Edge of Architecture, are offered in exquisite oceanfront rooms and suites, with the premier’s penthouse as the most luxurious (and expensive) option, with room enough for six adults across an impressive 2,800 square feet.

There are no fewer than seven dining options at Salterra, with Brine, Regatta, and Sisal among those serving vacationers daily. If you can afford it, we recommend the Salterra Epicurean Experience for your dining package.

It gives you breakfast, lunch, and dinner daily, prepared across the different venues at Salterra, as well as house wines, beers, and spirits.

One of the truest perks of a stay at the Salterra, though, is the spa. Sea salt is a key ingredient used throughout, and the Invigorating Cleansing Salt Ritual, at $375 (about €325 / £278) for 120 minutes, is to die for. The spa is super popular, according to the latest reviews, so booking is essential.

Salterra is on South Caicos rather than Providenciales, where most Turks & Caicos resorts sit. That means a short domestic hop on arrival, and a considerably quieter island at the other end — the trade-off is the whole point of the property.

5: W, Punta Cana

Opening date: August 2025 Rooms from: $400 per night, about €346 / £296 (Premier guest room, tropical view, all inclusive) Best for: An adults-only, all-inclusive foodies retreat

W Punta Cana began welcoming guests in the Dominican Republic in August 2025. It became W Hotels’ first all-inclusive, adult-only resort, and was a welcome addition to the highly regarded tourist hotspot of Punta Cana.

It’s part of Marriott Bonvoy, and was described as “the perfect location for the brand to debut its first ever all-inclusive,” by George Fleck, Senior VP and Brand Leader of W Hotels.

Aside from a sought-after postcode, W Punta Cana does food differently from most other all-inclusives. There are no buffets here; expect 12 a la carte dining and drink options, including at spots like Trade Market (open for breakfast, lunch, and dinner) or the dinner-only Satsuma Rooftop, where a hand-picked selection of Nikkei cuisine and the area’s first raw bar await.

Julio Cesar Valdivia is the head chef at the resort, regularly infusing the menus with international flair, often from his native homeland of Peru. The dining experience at the resort has been described as “multi-sensory” with unique themes and experimental cuisine frequently served across the venues.

No buffet at an all-inclusive is the detail that separates this from most of Punta Cana. If the thing that has previously put you off all-inclusive resorts is the food, this is the one on the list built specifically to answer that.

How to Choose Between Them

Decide on all-inclusive first. Royalton Vessence and W Punta Cana include meals; Sapphire Sands, One GT and Salterra are room-only with dining packages available. A $633 all-inclusive rate and a $454 room-only rate are not the comparison they appear to be once you add three meals a day and drinks.

Check what “adults-only” means for your trip. Two of these five are adults-only, which is the single biggest filter here. Sapphire Sands is the outlier built specifically for families and multi-generational groups.

Newer isn’t automatically better. The two 2025 openings on this list, Salterra and W Punta Cana, have had eighteen months of reviews and have ironed out the problems that new resorts always have. The 2026 openings are fresher but less proven.

Compare the format, not just the island.
