On Agmashenebeli Avenue, surrounded by the historic facades of a former German district, hides a restaurant that has become a symbol of Tbilisi’s new gastronomic movement.

Barbarestan is a family-run project inspired by the legacy of Barbare Eristavi-Jorjadze—19th-century writer, feminist, and author of the legendary The Complete Cuisine, the first Georgian cookbook written by a woman.

The Makaradze family, who own the restaurant, carefully revived forgotten recipes from her book and reinterpreted them through a contemporary lens. The interior preserves the spirit of the 19th century: brick walls, folk-patterned ceramics, candles, vintage mirrors, and Barbare’s portrait glowing under warm lamps.

Poliphonia follows a clear philosophy: “to reinterpret forgotten rural recipes and create new ones.” The kitchen brings back rare regional dishes of Georgia using wild, seasonal, local ingredients. The wine list focuses on natural Georgian wine, including rare qvevri selections.

Opened in summer 2024, Tsiskvili Terrace is the newest concept from renowned restaurant group Tsiskvili.

Located high above the river embankment, it offers panoramic views over the city. There is a large terrace, a bar, and an open show-kitchen where guests can watch dishes being prepared.

What to try: grilled mtsvadi (Georgian barbecue), signature mushroom appetizers, gomi and adjika served in clay ketsi bowls. A perfect spot for lunch on the terrace or a sunset dinner overlooking Tbilisi.
