If you plan trips around eating some of the best dishes in the world, then these new restaurants are well worth considering. From Paris to Peru, we’ve found some of the most exciting new restaurant openings around the globe, including a few that haven’t even opened their doors yet.
Foodies love them and locals rave about them. Some have already earned Michelin attention, and we can’t help but wonder how long before they’ll receive their stars.
Best New Restaurants in the World to Visit in 2026
19 Saint Roch, Paris
Google Rating – 4.6/5.0 (90+)


It makes sense to start in Paris, which holds a huge number of Michelin Stars. 19 Saint Roch opened in late 2024, near the Louvre and the Tuileries Garden in Paris’ 1st arrondissement. Chef Pierre Touitou knows what he’s doing after the successful launches of other projects, and the restaurant has caught the eyes of some big names, like taking the top spot in Condé Nast’s 2025 Best New Restaurants in the World.
It’s also earned a place in the Michelin Guide. Condé Nast includes braised beef with Savoy cabbage, candied oranges, and almonds in their review, but the menus change daily and always include seasonal French ingredients.

Arami, La Paz, Bolivia

Also in Condé Nast’s 2025 Best New Restaurants in the World is Arami, which opened at the end of 2024. It’s Chef Marsia Taha Mohamed’s first solo restaurant, after being head chef at another major fine dining restaurant in Bolivia, which makes the success even more impressive. She was named Latin America’s Best Female Chef in 2024 by World’s 50 Best, so it’s popularity is hardly surprising.
The menus here are either tasting or à la Carte and change constantly. Visitors have praised dishes like cured lamb and goat ribs, and more unusual dishes like alligator have also been spotted on the menu.
Comal, New York
Google Rating – 4.7/5.0 (50+)




In June 2025, Comal opened its doors in the Lower East Side of NYC, serving Mexican cuisine blended with other food cultures. Chef Gaz Herbert’s first independent restaurant is one to watch, according to the World’s 50 Best, appearing in its 11 New Restaurants to Put on Your Radar article. It’s relatively small, and although booking is encouraged, bar seats are available for walk-ins.
The current menu has dishes like crab tostada for $19, wagyu skirt asada to share for $94, and even Oscietra caviar for $20. The drinks offerings are also carefully curated, with classic cocktails merging with Mexican ingredients.
Legado, Shoreditch, London
Google Rating – 4.9/5.0 (30+)

Legado is a Spanish restaurant that opened in Shoreditch, London, in August 2025. It’s run by Nieves Barragán Mohacho, who heads up Michelin-starred Sabor in Mayfair, and we think it won’t be long before Legado gets a star. It featured in the World’s 50 Best new restaurants article, and The Times reviewed it, predicting it as ‘the big hit of winter 2025.’
The menu features seafood, lamb, Iberico pork, and vegetable dishes. Recent reviews have highlighted standout dishes like Skate Wing Tortilla for $29 and lamb Churrasco de Cordero for $78. There’s also a decent wine and drinks menu, with cocktails like Romesco Martini on offer.
Otôto, Lima, Peru
Google Rating – 4.7/5.0 (20+)


Otôto Barra Nikkei opened in April 2025 and has reached the top spot in The World’s 50 Best 11 New Restaurants to Put on Your Radar article. It’s located in Lima’s vibrant, urban Surquillo district and serves a fusion of Japanese and Peruvian flavors. Before striking out on his own, chef Marco Palma worked at Maido, a very popular Lima Nikkei restaurant nearby.
Otôto is small and intimate, with only eight seats at the sushi counter. It’s seafood-heavy, with daily catches, and you can expect dishes like sashimi and nigiri. The chefs pick the best cut, and you can watch your dishes come to life from your seat.

Bar Vitrine, Copenhagen

Bar Vitrine opened in late 2024 on the corner of Møntergade and Vognmagergade in Copenhagen. It’s an intimate wine bar and eatery led by chef Dhriti Aroa, formerly of the iconic Noma restaurant (which we’ll dive into more, including its grand opening in LA, shortly).
You can expect a top-tier fine dining experience here with different flavours. Arora brings Indian-inspired influences, with a strongly seasonal and local menu, paired with natural wines. It’s a no-reservations restaurant, but thankfully, there’s outdoor seating to enjoy during the warmer months.
Condé Nast reviewed it in its Best New Restaurants in the World article, highlighting dishes like battered spinach leaves with blood orange and mind, garlic emulsion, and chapati stuffed with chickpea stew.
Caleña, Ávila, Spain
Google Rating – 4.6/5.0 (80+)


Caleña has been welcoming visitors since late 2024. It’s positioned alongside the medieval city walls at Calle Telares 1 in Ávila, part of the five-star La Casa del Presidente Hotel. The restaurant reinterprets Castilian gastronomy by balancing tradition with modern techniques and serves tasting menus, à la carte, and sharing plates. The Michelin Guide recognizes the hotel and calls it a ‘piece of Spanish history’, so it’s no surprise that the new restaurant has caught its eye too.
The Michelin Guide praises the menu and highlights ingredients like the leeks from Sahagun, cured sardines, and garum vinaigrette. Dishes like pork snout, oyster, and turnip kimchee, as well as ‘Jipijapa’-style Medina prawns, are served here.
Upcoming Restaurants for 2026
Noma, LA
Iconic Nordic restaurant Noma is set to open a temporary residency in Los Angeles in 2026, running for about six months. Reservations haven’t opened yet, so you must join the waiting list to secure a spot. Noma’s Copenhagen flagship proudly holds three Michelin Stars, and with its acclaimed seasonal menus that guests rave about, you can expect top-tier cuisine to be served here.
Terrace Boulud, Hong Kong


Award-winning chef Daniel Boulud will bring his celebrated French cuisine to Hong Kong in early 2026. Terrace Boulud will sit on the 25th floor of Landmark Prince’s in the middle of the city, featuring a rooftop terrace for iconic skyline views.
Boulud will bring his four-pillar framework to Hong Kong: La Tradition with classic French dishes, La Saison with seasonal plates, Le Potager with vegetables, and Le Voyage featuring international flavours.
Waldorf Astoria, London


2026 will be a busy year for Daniel Boulud as he’s also joining forces with British chef Clare Smyth to launch two signature restaurants at the new Waldorf Astoria in London. The hotel is within the historic Admiralty Arch and promises a grand setting for these new restaurants. Details are still under wraps, but with chefs like this, expectations are high.
